Responsibilities
Tasks
• Estimate amount and costs of supplies and food items
• Maintain records of food costs, consumption, sales and inventory
• Analyze operating costs and other data
• Demonstrate new cooking techniques and new equipment to cooking staff
• Supervise activities of specialist chefs, chefs, cooks and other kitchen workers
• Create new recipes
• Instruct cooks in preparation, cooking, garnishing and presentation of food
• Prepare and cook complete meals and specialty foods for events such as banquets
• Supervise cooks and other kitchen staff
• Prepare and cook food on a regular basis, or for special guests or functions
• Prepare and cook meals or specialty foods
• Requisition food and kitchen supplies
• Arrange for equipment purchases and repairs
• Consult with clients regarding weddings, banquets and specialty functions
• Plan and direct food preparation and cooking activities of several restaurants
• Plan menus and ensure food meets quality standards
• Prepare dishes for customers with food allergies or intolerances
• Recruit and hire staff
• Supervise activities of sous-chefs, specialist chefs, chefs and cooks
• Train staff in preparation, cooking and handling of food
• Leading/instructing individuals
Culinary Leadership & Menu Development
• Lead the culinary vision of the restaurant by designing and executing a refined menu featuring authentic and contemporary Indian cuisine inspired by the vibrant flavors of Mumbai.
• Develop signature dishes, tasting menus, and seasonal specials that highlight regional Indian ingredients, premium spices, and innovative culinary techniques.
• Oversee the preparation and presentation of all menu items to ensure exceptional taste, quality, and consistency aligned with the restaurant’s brand and standards.
• Create and standardize recipes, portion sizes, and plating guidelines to maintain consistency across all kitchen operations.
• Accommodate special dietary requirements and customized menus for guests, including vegetarian, vegan, gluten-free, and other special food preferences while maintaining authentic flavors.
• Continuously research and introduce new cooking techniques, ingredients, and global culinary trends to enhance the restaurant’s reputation and guest experience.
Kitchen Management & Operations
• Direct and supervise all kitchen operations, ensuring efficient workflow, high productivity, and adherence to professional culinary standards.
• Recruit, train, mentor, and manage kitchen staff including sous chefs, line cooks, and kitchen assistants to maintain a high-performance team environment.
• Assign duties, manage kitchen schedules, and monitor staff performance to ensure smooth daily operations.
• Ensure strict compliance with all food safety, sanitation, and hygiene regulations in accordance with Alberta Health Services standards.
• Monitor kitchen equipment, maintain cleanliness of preparation and storage areas, and ensure proper handling of food and ingredients.
• Coordinate with front-of-house management to deliver a seamless and high-quality dining experience for guests.
Executive Oversight, Quality Control & Strategic Planning
• Oversee sourcing of premium ingredients and specialty spices, working closely with suppliers to maintain the authenticity and quality of Indian cuisine.
• Manage food inventory, ordering, and cost control to ensure efficient use of ingredients while minimizing waste.
• Maintain strict quality control by inspecting dishes before service and ensuring presentation meets fine dining standards.
• Collaborate with restaurant management on menu pricing, kitchen budgets, and strategic planning to support business growth and profitability.
• Lead the development of catering menus, private dining experiences, and special culinary events that showcase the restaurant’s signature offerings.
• Monitor guest feedback related to food quality and continuously refine menu items and preparation methods to maintain exceptional dining standards.
