Responsibilities
Tasks
· Prepare high-quality sushi, sashimi, nigiri, maki and specialty rolls.
· Supervise and train sushi cooks and junior sushi staff.
· Maintain sushi bar inventory, freshness rotation and safety.
· Inspect fish quality and ensure proper storage.
· Assist Executive Chef with menu items and seasonal features.
· Maintain presentation standards and consistency.
· Maintain records of food costs, consumption, sales and inventory, Analyze operating costs and other data
· Demonstrate new cooking techniques and new equipment to cooking staff
· Create new recipes
· Requisition food and kitchen supplies
· Plan menus and ensure food meets quality standards
· Prepare dishes for customers with food allergies or intolerances
