This position plays a key role in bringing the culinary vision of Quails’ Gate to life. Responsible for demonstrating leadership, you will prepare and execute dishes with precision, consistency, and a commitment to the high standards that define Old Vines Restaurant. Working with exceptional local ingredients and thoughtfully crafted menus, you’ll support the culinary team in delivering memorable, wine-inspired dining experiences.

Key Responsibilities

  • Prepare and cook meals ensuring the highest quality and standards.
  • Ensure consistency in taste, portioning, presentation, and overall quality of all dishes.
  • Responsible and accountable for setup and organization of your kitchen section, including ingredients, tools, and equipment.
  • Maintain proper food handling, storage, and sanitation practices at all times.
  • Collaborate with the rest of the kitchen team to ensure smooth operations during service.
  • Assist with menu development and creative presentation when required.
  • Monitor inventory for your section and report shortages or issues to the sous chefs.
  • May assist in the supervision, onboarding and training of cooks and other kitchen staff in preparation, cooking, garnishing and presentation of food
  • Adhere to all health, safety, and workplace regulations.
  • May contribute to recipe creation, menu development, culinary innovation, adapting dishes to dietary requirements (allergies, restrictions), and maintaining consistency in food quality across shifts.

Qualifications & Requirements

  • Culinary training: a diploma, certificate, or equivalent in Culinary Arts
  • 3+ years’ experience in a fine dining kitchen.
  • Red Seal Certified is an asset
  • Strong leadership skills with the ability to supervise and train staff.
  • Excellent knowledge of food safety standards and sanitation practices.
  • Ability to work in a high-pressure, fast-paced environment.
  • Strong organizational and time-management skills.
  • Flexibility to work evenings, weekends, and holidays as required.
  • Proven experience with modern cooking techniques and high-volume service.
  • Ability to work a flexible schedule including evenings, weekends, and holidays.

Wage Range, based on experience: $23.50 – $25.50 plus gratuities
