Responsibilities

Tasks

Production start-up, including bakery equipment pre-operational check
Ensure accuracy of standard recipes and technically correct process during production runs
Monitor production process from mixing, resting of dough, through rounding and other parameters that form consistent bread quality, standard look, and flavour
Organise workflow in the bakery to maximize efficiency
Provide expertise support by evaluating quality, yeilds, process, prodcedures and suggest improvements
Work closely with Head Baker on product development
Coach junior staff (Assistant Bakers, Production Bakers, etc) providing hands-on training
Facilitate discussions to identify options for continuing improvement, especially with junior staff
Back up Head Baker; re-place Head Baker during his/her absence.
