Prepare specialty foods such as Sushi rolls, other raw food and other menu items
Expertly cutting, slicing, and filleting different types of fish.
Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informingthe Executive Chef when quality is sub-standard
Preparing various types of sushi dishes according to established guidelines on quality, portionsize, presentation, and food safety
Maintain records of food costs, consumption, sales and inventory
Demonstrate new cooking techniques and new equipment to the cooking staff
Create new recipes, instruct cooks in preparation, cooking, garnishing and presentation of food
